Coffee is one of the most complex agricultural products in the world \u2014 shaped by altitude, soil, rainfall, processing, roasting, and the hands of countless skilled people along the way. We believe understanding that journey makes every sip more meaningful.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity is-style-dots\"\/>\n\n\n\n<p>The journey begins at origin \u2014 farms high in the mountains of Ethiopia, Colombia, Guatemala, and beyond. Coffee cherries are <strong>hand-picked at peak ripeness<\/strong>, then processed using natural, washed, or honey methods that dramatically shape the final flavor. Each decision at origin echoes all the way to your cup&#8230;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Harvesting &amp; Cherry Selection<\/li>\n\n\n\n<li>Processing: Washed, Natural, or Honey<\/li>\n\n\n\n<li>Milling &amp; Green Bean Export<\/li>\n\n\n\n<li>Roasting &amp; Resting<\/li>\n\n\n\n<li>Cupping &amp; Quality Control<\/li>\n\n\n\n<li>And <em>Brewing<\/em> \u2014 the final act in the story \ud83d\ude42<\/li>\n<\/ul>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity is-style-wide\"\/>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"the-roaster\">Our Roasting Process<\/h2>\n\n\n\n<p>We roast in-house in small batches, using a drum roaster that gives us precise control over temperature and airflow. Every roast profile is developed through dozens of sample roasts before it goes into production. We chase the moment when a bean fully expresses its potential \u2014 not too light that it&#8217;s underdeveloped, not so dark that the roast overwhelms the origin character.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-style-default is-layout-flow wp-block-quote-is-layout-flow\">\n<p>The roaster&#8217;s job is to get out of the way of a great green bean and let it speak for itself.<\/p>\n<cite>George Howell, Pioneer of Specialty Coffee<\/cite><\/blockquote>\n\n\n\n<p>After roasting, all of our coffees rest for a minimum of five days before being packed or used on bar. This rest period \u2014 called degassing \u2014 allows CO\u2082 built up during roasting to escape, resulting in a more even and flavorful extraction. It&#8217;s a step most people skip; we never do.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"direct-trade\">Our Direct Trade Relationships<\/h2>\n\n\n\n<p>We work directly with a small network of farms and cooperatives that share our commitment to quality and fairness. Direct trade means we pay above Fair Trade minimums, provide feedback on quality from cup to farm, and visit our producers in person whenever we can.
